When done remove bacon bits. 2.Cut up celery, onions, garlic, bell peppers, parsley, cilantro and sautee in the rendered bacon fat. Just before done season salt to taste. 3.Season fish with season salt & black pepper. Fry in olive oil. When fully cooked, cut up in small pieces. 4.Put water, coconut milk, & curry into a large pot. Stir in season salt and black pepper to taste. Pour rice into pot. Add sauteed seasonings, bacon bits, and cod fish into pot. 5.Place on stove and bring to a full boil. This delicious one pot meal is budget friendly and your friends and family will come back for encore servings!! I hope you enjoy this recipe!!! Recipe: Pot full of boiling water 3 tbs. Sofrito 3 tbs. Recaito 1/3 cup Alcaparrado 1 tbs. Tomato Sauce 1 cup Frozen Peas and Carrots 1/2 lb or 1/2 pack of Salt Cod/Bacalao 2 envelopes Sazon /Culantro & Achoite 1 tbs. dried Cilantro Salt and Pepper to taste 1 tsp Chicken Bouillon 1 tsp. Garlic Powder 1/4 tsp. Red Pepper Flakes (optional) 3 -1/2 cups Water 3 cups Extra Long Grain Rice 3 tbs. Vegetable Oil In the pot full of boiling water add in Salted Cod fish and let boil for 10 minutes, drain and rinse with cold water. Then taste-if the cod fish is a little salty, move on to the next step, if very salty, repeat boilding water, add fish and boil for 10 more minutes, drain, rinse and taste. Shred fish with fork and set aside. You should have about 1 cup of shredded cod fish. In a pot where you cook rice, pour in oil- once oil is hot, add in sofrito, recaito- cook for about 1 minute, then add in Alcaparrado, tomato sauce and shredded cod fish, cook on medium/high heat for about 5 minutes. After 5 minutes add in all spices and mix in well. Pour in rice and saute for about 1 minutes- mixing spices, cod fish and rice together. After 1 minute add in water and give a quick stir. - CHARLIE PALMIERI Arroz Con Bacalao.wmv Charlie Palmieri was born on 21 November 1926 in New York City of Puerto Rican parents. He was the pioneer of the Palmieri family in the development of the salsa music genre in which his brother Eddie was later successful as well. Palmieri was, without a doubt, one of the best pianists in latin music circles. By 1943, during World War II, he played in Pupi Campos orchestra. At that time, he also directed the orchestra of the Jack Paar show, for a short while. Use of the flute, previously introduced in New York by Gilberto Valdés and José Fajardo, was accepted by the dance orchestras, thanks to Palmieri. A lover of jazz and Cuban music, Palmieri also directed the bands of Pupi Campo, Rafael Muñoz, Noro Morales, Tito Puente, Xavier Cugat and Moncho Usera. Palmieri was known as the giant of the black and whites for the voluptiousness of his execution and the forceful style on the keyboard. He made more than 20 long-play recordings over the course of his career. These included Electroduro, with Vista Hace Fe. in its song list, and Gigante del Teclado. He lived many years in Puerto Rico; playing at hotels in San Juan, until he decided to return to New York after suffering a heart attack. Palmieri died on 12 September, 1988 in New York just before his scheduled tour to the United Kingdom and Japan, in which he was to accompany the famous Cuban conga virtuoso Ramón Mongo Santamaría.
