After some research, we discovered one main ingredient in Jello to be gelatin, which is made from processed collagen, a structural protein that exemplifies two main characteristics of proteins we discussed in lecture: support and contractility. Collagen is a strong connective tissue that comprises ligaments and tendons and is responsible for skin elasticity. It is composed of amino acids like glycine, proline, and hydroxyproline, which wind together with hydrogen bonds in polypeptide chains shaped like alpha helixes. We used hand-drawn illustrations and original computer graphics to depict both the formation of collagen and the parts of the body it comprises. Next, we explained how processed gelatin forms from collagen by addressing the proteins various bonding patterns along the triple helixes, which create pockets that trap large amounts of water and result in semisolid colloids.
