Top that off with the rich chocolate flavor and you have a winning dessert. Chocolate Souffle 1 Tbs butter 2 Tbs sugar 3 Egg Whites 1/4 tsp Cream of Tartar 1/3 cup of powdered sugar 2 egg yolks 4 oz semi-sweet chocolate 2 Tbs butter Preheat oven to 400 degrees. Butter four 7oz ramekins and then coat the inside with sugar. Place in refrigerator. Melt chocolate and butter over low heat, stirring until completely melted. Remove from heat and whisk in egg yolks. Return the chocolate mixture to the stove and heat over low heat, taking care not burn the chocolate. In a clean bowl, combine egg whites and cream of tarter. Whip until soft peaks form. Add powdered sugar to the egg whites and continue to whip until hard peaks form. Divide the egg whites into 4 portions, and gently fold the egg whites into the melted chocolate, taking care not to stir the mixture (only fold). Fill each ramekin two-thirds of the way with the mixture, and put in the oven. Set your timer for 8 minutes. Once 8 minutes have elapsed, reduce the oven temp to 350 degrees and cook for another 5-6 minutes. Remove from the oven and eat ASAP.

  • Valentine Baking w/ Beth: Molten Chocolate Lava Cakes Recipe: 4 squares Baker's Semi-Sweet Baking Chocolate 1/2 cup (1 stick) butter 1 cup powdered sugar 2 eggs 2 egg yolks 6 Tbsp. flour Preheat oven to 425 degrees Fahrenheit. Butter four custard/ramekin/souffle dishes. Place on baking sheet. Microwave chocolate and butter in large microwaveable bowl on high 1 minute or until butter is melted. Stir with a wire whisk until chocolate is completely melted. Stir in sugar until well blended. Blend in eggs and egg yolks with wire whisk. Stir in flour. Divide batter among prepared custard cups. Bake 14 minutes or until sides are firm, but centers are soft. Let stand one minute. Carefully run a small knife around cakes to loosen. Invert cakes onto dessert dishes. Serve immediately, topped with whipped topping, if you like. (I personally think it would distract from the flavor, and would be a bit of over-kill). BE CAREFUL!!!! It is VERY VERY hot when it first comes out. The sides are fine--it's the molten lava that will kill you if you aren't careful. Lea (achampag) brought up a good issue. She asked what if you didn't have ramekin cups. Duh! I think everyone has all the crap I do! You can easily use muffin tins. I would use the jumbo sized ones, but you can also use the regular sized ones. You would bake them for 10 minutes. If using the smaller sized tins, watch it at around 8 or 9 minutes. You don't want to over-cook it, as basically you would cook the 'lava' into harder form and be left basically with a brownie!

Split surface of vanilla bean lenghtwise down the center with tip of paring knife. Push side of knife down center of bean to open it up, loosening tiny seeds of the pod. Put whole pos and seed into milk. (If using vanilla extract, don't add yet). Place saucepan over medium-high heat and bring to a low boil. Reduce heat to low and whisk in sugar, salt, and lemon zest. Ladle about .25 Cup of hot milk mixture very slowly into beaten egg while whisking gently. (This tempers the liquid so egg won't scramble.) Pour egg mixture into saucepan, stirring to combine with remaining hot milk. Add rice and raise heat to medium-high. Stir constantly over low heat until mixture begins to thicken, about 10 minutes. Stir in butter and vanilla extract, if using. Immediately spoon pudding into ramekins or bowls. Sprinkle lightly with cinnamon. Serve warm or chilled.

(Makes 4) 3 C whipping cream 5 tsp grated lime peel 3/4 sugar, with additional for top 7 large egg yolks 1 and 1/2 C crushed Cool Ranch Doritos Preheat oven to 325 degrees. While that is heating up, combine cream and lime peel in a saucepan and bring to a simmer. While the cream mix is heating whisk together the egg yolks and sugar in a bowl until is has just started to thicken, then whisk in 1 cup of the crushed Doritos until the mix is thick. The cream mix should be starting to get hot; remove it from the heat and slowly whisk it into the Dorito mixture. After mixing, pour equal amounts of the mix into four ramekins. Place the ramekins in a metal baking dish and fill the metal dish with hot water up to halfway up the sides of the ramekins. Place in oven and bake for 55 minutes. Remove the custards from the water bath and chill them, uncovered for at least three hours to allow them to set. After the custards have chilled, place them on a fire-safe surface. Sprinkle a layer of sugar over the custard in each ramekin. Use a cooking torch to heat the sugar until it just starts to liquefy, then add a thin layer of the remaining crushed Doritos on top of the sugar, pressing down very lightly, and then torch some more until the Doritos are browned.
