The APA gets a standard single infusion mash at 150, and the Hefeweizen gets a protein rest at 122F for 35 minutes. After 35 minutes, I pull 4.25 gallons of the mash and do a decoction to bring the mash up to saccharification rest temperature at about 154 and let it rest for another 45 minutes. To keep the video to a minimum, I did not include the hop additions or footage from both boils. The APA was a 60 minute boil and the Hefeweizen was a 90 minute boil. Anytime that I have a grainbill around 50% pils or higher, I like to boil for 90 minutes to help drive off DMS. This may be the last video in the series. I have some footage of racking down in the brew room, but I haven't reviewed it yet. If there's enough there to put up a video then I'll make another one.
